Chakalaka Breakfast Tacos

Ingredients

  • 6 small soft tortillas
  • 8 eggs
  • 50 g Chakalaka Wagyu Biltong, chopped
  • 1 tablespoon olive oil or Beef Tallow
  • 1 ripe avocado, sliced
  • 2 tablespoons Big Rick’s Original BBQ sauce
  • 2 tablespoons Gourmet Granny’s Creamy Garlic Sauce (optional)
  • Salt and pepper, to taste
  • Chopped coriander and lime wedges, for serving

Instructions:

  1. In a bowl, whisk the eggs with a pinch of salt.  Heat oil or tallow in a nonstick pan over medium heat.  Pour in the eggs and scramble gently until just set.  Remove from heat.
  2. Warm the tortillas in a dry skillet or microwave until pliable.
  3. To assemble, spoon scrambled eggs onto each tortilla.  Top with chopped Chakalaka Biltong, avocado slices and coriander.  Drizzle with Big Rick’s Original BBQ sauce and a swirl of Creamy Garlic Sauce if using.
  4. Serve immediately with lime wedges on the side.
